Remove env_file from docker-compose.yml for Jenkins compatibility

Docker Compose was trying to load .env file which doesn't exist in Jenkins.
Jenkins deployments use credentials instead of .env files.
Environment variables are now only passed through the environment section.

This allows the validation stage to pass without requiring a .env file.
